According to a study published in the Journal of Agricultural and Food Chemistry, USDA, compounds called the glycoalkaloids are produced in all parts of the potato plant including the leaves, roots, tubers and sprouts.

  1. Glycoalkaloids are considered toxic and consumption of this compound can have toxic effects on the nervous system and the body.
  2. Sometimes, the potatoes may also turn green due to a concentration of glycoalkaloids in that part of the root.
  3. The green part is also not safe for consumption and should be removed.

If you consume glycoalkaloids in more amounts than fit, you may experience problems like nausea and vomiting. However, while the sprouted buds and green parts of the potato contain glycoalkaloids at unsafe levels of consumption, it does not make the whole potato unfit to eat.
